Banana Soft Serve with Mango, Raspberries and Shaved Coconut

“Life is short so eat dessert first” however I am trying to cut out processed sugar out of my family’s diet. Sugar is so bad for our bodies unfortunately everything we consume today pretty much contains sugar. Did you know that even milk has sugar in it? Most of us have heard the advise that we should eat less sugar, despite this, many of us still consume too much of it.

Briana and I love ice cream and in my efforts to reduce the amount of processed sugars we eat I started freezing over ripe banana’s and making my own soft serve. I strongly suggest you give this a try. It’s so simple to make, yet so flavorful and tastes just like a soft serve ice cream. This is also a great way to use fruits that aren’t being consumed in time and perfect for someone with lactose intolerance like my hubby.

Freeze peeled banana’s and other fruit or berries you like. Add to a blender with about 1/4 cup of coconut milk. Blend until smooth. Top with fresh mango chunks, raspberries, shaved coconut and nuts. That’s it. It’s that simple but so delicious.

You can use a combination of fruits and berries to make different flavors, top with different toppings or simply enjoy with a little greek yogurt on top. Yummm.

Ingredients
  • 2 frozen peeled bananas
  • 1/4 cup coconut milk
  • 1/2 fresh mango, cubed
  • 1 tsp shaved coconut
  • handful fresh raspberries
  • 1 tbsp nuts (optional)
Directions
  • 1. Combine bananas and milk in a blender.
  • 2. Blend until smooth.
  • 2. Top with mango, raspberries, coconut and nuts.
