I subscribe to every imaginable food magazine out there. You name it and i got it. Last night as I was clipping Food & Fine Magazine recipes and enjoying a good glass of wine i had a craving for peaches. Tis the season for peaches and garden herbs after all. I must admit the peaches I picked up earlier at the farmers market were really calling my name. I found a fantastic recipe for a Peach Lemonade I wanted to try but couldn’t bare the thought of destroying the gorgeous fruit by making a syrup out of it. I wanted Kurt and Briana to enjoy the fruit as well so I came up with an easy super fresh salad using the peaches I bought and basil from my garden. The combination of basil and peaches drizzled with honey lemon dressing was divine. I’d like to share it with you. Enjoy.
Basil Peach Raspberry Salad
2 peaches, sliced
6 basil leaves, sliced
1/4 cup raspberry
1 tbsp honey
1/2 tbsp fresh lemon juice
- 1. In a small bowl combine first 3 ingredients
- 2. In a separate bowl mix honey and lemon juice
- 3. Pour over the peach salad and enjoy
