Black Bean and Quinoa Salad



One of my favorite quick and easy salads is the Black Bean and Quinoa Salad. Not only is it easy to put together but it’s also healthy and nutritional.

Quinoa is a protein packed seed, nutty in taste and chewy in texture. Its a satisfying low cholesterol source of complex carbohydrates. Rich in fiber, it is slowly digested leaving you satisfied for a longer period of time.

Kurt worked late tonight and i was craving this salad. It so simple to put together. Just combine corn, tomatoes, black beans and avocados with cooked quinoa. Dress it with some salsa verde or italian dressing and Vola, there you have it.

This salad has become my staple go to when we need something quick but healthy.

 

BLACK BEAN AND QUINOA SALAD RECIPE

1 cup quinoa (cook according to directions, for every 1 cup of quinoa add 2 cups of water)
1/2 can of corn, drained and rinsed or roasted corn on the cob
1/2 can of black beans, drained and rinsed
1/4 of medium red onion, chopped
1/2 jalapeno, chopped (optional)
1 medium tomato, chopped
1/4 of red bell pepper, chopped
1/4 cup of store bought salsa verde or low fat italian dressing ( i make my own by buying italian dressing packets and combining them with oil and vinegar)
cilantro, chopped (optional)

DIRECTIONS

1. Cook quinoa according to directions. Once done, let sit until cool. I love using my rice cooker to cook quinoa. Its simple, easy and fool proof.
2. Combine all the ingridients in a bowl, add cooled quinoa, dress with salsa verde (or italian dressing if using that instead) and stir gently all together.
3. Let sit for 10 min and serve

    I noticed that you say “salsa verde OR italian dressing”. There must be a huge flavor difference between the two. Which do you prefer?

      Mickey, I prefer salsa verde. But I don’t always have it on hand. The difference in flavor is distinct but fantastic with either one.

    I made this tonight and my hubby and I loved it!!! Yumm. I tried it with Italian dressing. THis was so easy to make and in not time we had a healthy dinner. It was filling and satisfying. Thanks Kathy!!
