Before Kurt moved to the NY/NJ area he had never heard about the everything bagel. Seriously?! I’m a New Yorker, I mean c’mon! Fuggedaboutit! Luck has it, it turned out to be his favorite breakfast sandwich. An everything bagel with lox, cream cheese and capers. An everything bagel topped with cream cheese, smoked salmon, red onions slices, capers and tomato is the best fast food breakfast that I can think of as well. Of course, there is the old fashioned bacon, egg and cheese or toasted plain bagel, but to me those don’t come close to what we call the Lox Bagel.
In the perfect world I would eat a bagel for breakfast every day. Unlucky for me, I don’t live in a perfect world and my favorite bagel is on the list of the “not so good for your figure” foods. Giving up my Lox Bagel is not even an option so I compromised. After all, healthy eating is not about limits. Instead it’s about keeping an open mind and finding healthier alternatives.
I said goodbye to my favorite bagel (reserving it for once in a while type of meal) and replaced it with low fat plain Greek yogurt. I even took it a step further and created lunch out of it by placing all that goodness on a bed of greens. How awesome is that?
I promise, it’s good.
- 3 slices smoked Nova salmon
- 1 radish, thinly sliced
- ¼ cup plain low fat Chobani yogurt
- 2-3 red onion slices (not pictured)
- ¼ cup grape tomatoes, quartered (not pictured)
- 5 slices small kirby cucumber
- 1 tsp capers
- handful arugula microgreens (optional)
- salad greens (optional)
- ½ tbsp hemp seed
- 1 tsp dry onion
- ½ tsp black sesame seeds
- Arrange the first 7 ingredients in a bowl over salad greens (if using).
- Top with hemp seed, dry onion and sesame.
