Hope everyone had a great Labor Day Holiday and enjoyed the long weekend if you were lucky to have three days off. Although I had to work Saturday I was happy to have two full days off and enjoy the time with my family. As much as I love summer I am always happy when Labor Day comes around because that means that football season is here and our house is football obsessed. 🙂 This year I am extra excited since Briana is also starting pre-K. With that said I can’t believe it’s that time of the year again. With football come wings and beer and Kurt and I wanted to kick off the festivities with a trip to Buffalo Wild Wings for a little diet cheating. We ordered 24 wild wings, had a beer and really enjoyed all the football talk. The next day, while Kurt was at work, Briana and I had a girls day out. We spend most of the day shopping for back to school supplies, visiting with my parents and having fun at the frozen yogurt shop.
As the weekend was coming to an end, I found myself once again thinking healthy and preparing nutritious lunches for my loves. So I made Hummus & Turkey Lavash Wraps. Lavash is a soft, thin, flatbread popular in the middle eastern countries perfect for making wrap sandwiches. I happened to pick some up at the Farmers Market the other day.
I used leftovers of my roasted pepper hummus, added baby lettuce, deli turkey and cheese and Vola! delicious and nutritious lunch ready within minutes. I was so happy with the way it turned out I want to share.
Lavash Turkey & Hummus Wraps
- 1 lavash
- 2 tbsp hummus, flavor of your choice
- 4 deli turkey slices
- 3 deli muenster cheese slices
- 1. Spread hummus on lavash.
- 2. Top with lettuce, turkey and cheese.
- 3. Starting with one end tightly roll into a cigar shaped roll.
- 4. Cut off each hollow end.
- 4. Slice in half. Enjoy.
