One of my favorite things about having a full weekend off is the amount of work I can get done and still find time to relax. Saturday I spend an entire day cleaning. I guess I can say I had an “end of summer cleaning day”. I reorganized all the closets, cleaned the entire house, did all the laundry, went food shopping, made croutons, hummus and enough roasted garlic to last a week, even cleaned my pantry and spice cabinets. I felt so exhausted by the end of the day I promised myself I was going to spend my Sunday relaxing. But that did not happen either. On Sunday, I felt like nesting and decided that it was time for Briana to have her own bathroom. Kurt and I spend part of Sunday morning remodeling and redecorating. As if this wasn’t enough the three of us then went out shopping. The rest of the day flew by and somehow I found myself still awake at 1am. Maybe it was the great music we were enjoying but perhaps it was my desire to stretch what was left of the weekend a little longer, almost trying to convince myself that if I didn’t go to bed it wouldn’t end. I can certainly tell you I was not happy with myself the next morning when the alarm went off at 6am.
Sometime yesterday I made a fantastic lunch for Kurt and I. Easy, healthy and fast to put together my avocado and crab salad can be served as an appetizer in martini glasses at your next party or as a salad on a bed of greens or on top of garlic toasts as an h’orderve.
When shopping for crab meat always buy quality. It’s pricier but the taste difference is astounding. To make this recipe combine crab meat, tomatoes, avocado and corn and add zesty dressing. Serve chilled.

- 1/2 lb lump crab meat
- 7 cherry tomatoes, quartered
- 1 avocado, diced
- 1 corn on the cob, kernels cut from the cob
- 1 tbsp cilantro, chopped
- 1 tbsp olive oil
- 1/2 lime
- 1/4 tsp garlic powder
- salt to taste
- 1. Gently combine the first four ingredients in a mixing bowl.
- 2. To make the dressing, mix the last 4 ingredients.
- 3. Pour the dressing over the crab mixture, stir gently and serve.
The highlight of my weekend, however, was getting back into my exercise routine. Before starting my blog, I was exercising consistently. I ran a few times a week and worked out in the comfort of my own living room. Being a busy mom, its tough to make it to the gym. It took me a while to find middle ground between work, my family and exercise. I really enjoy running and while Briana spend time with her grandma I took my “babies” out for a little hit the pavement.
I also enjoy working out with the Tone it Up Girls. The workouts are appealing and easy to follow. I feel the burn but at the same time I am not killing myself. So glad to be back on track. 🙂
