Simmered Artichokes

I don’t know about you but I am ready for a vacation. Mexico can’t come fast enough and it’s only a month away. Between work, the Hurricane and now this snow storm I am in desperate need of the beach, the sun and relaxing. It’s snowing pretty hard outside. I think we’re supposed to get a few inches, which is going to make for a “fantastic” commute to work in the morning. Ok, I’m done venting. Time to enjoy a glass of wine and share a simple recipe with you.

Artichokes are intriguing to many people. I find people ask me how to cook them whenever I am at the farmers market. That’s probably because I am the only person that buys a bunch at a time. When it comes to nutrition, artichokes are a vitamin powerhouse, full of potassium, vitamin C, magnesium, dietary fiber and even protein. I imagine that if you didn’t grow up eating artichokes they might come across a little intimidating. There are a few ways to prepare this delicious vegetable and I am going to share my favorite way with you.

Begin by boiling 3 cups of water, 1/2 cup white wine, bunch of fresh parsley and 4 garlic cloves. Season with salt. Reduce to simmer. Tip: I usually buy a big jug of Chablis (white wine) and keep it in the kitchen to cook with. It’s inexpensive and works great.

Meanwhile, prepare the artichokes by cutting of the stem and rubbing with lemon. Then cut about an inch of the top and rub with lemon as well. Rubbing it with lemon prevents the artichoke from browning. Take a pair of kitchen scissors and cut a little of the top of each leaf to get rid of the prickly points.

Then simply sit the artichoke stem side up into simmering water and cook about 30 min. Turn upside down and simmer another 30 minutes. You can even add the lemon used to rub them down.

Serve with light mayo on the side for dipping. And Vola! you have a yummy artichoke.

This has become our favorite go to appetizer. We can polish off two artichokes each in one sitting without feeling guilty.

Simmered Artichokes

Simmered Artichokes Recipe
Healthy, Appetizer, Artichokes
Cooks in    Serves 2
Ingredients
  • 3 medium artichokes
  • 3 cups water
  • 1/2 cup white wine
  • bunch fresh parsley
  • 4 garlic cloves
  • lemon
  • salt
  • light mayo for dipping
