There is something about the aroma of sweet and spicy nuts of New York City. If you visited NY then you know the distinct and appealing smell I’m talking about. The whiff of the fragrant roasted nuts is simply fantastic. I can never walk past one of those stands and not get a bag. I don’t visit the city as much as I used to but I occasionally crave the wonderful aroma of the delicious nuts. Last night when a craving attacked I decided I was going to finally make some at home. The beauty of these is they are healthier and even vegan. Instead of sugar I used maple syrup, spiced them up with cayenne and added fragrant spices for an extra layer of delicious.

Mix dry ingredients, cinnamon, cumin, chili powder, sal del mar or sea salt, nutmeg, ground ginger and of course cayenne pepper. Add nuts and maple syrup. I prefer organic maple syrup and like using a variety of nuts – hazelnuts, pecans, almonds, walnuts, you name it. Add them all.

MIx well and spread on a cookie sheet layered with aluminum foil.

Bake for 20 minutes, mixing every 7 minutes.

Transfer nuts into a bowl right away. Do not let them sit on the foil. Otherwise they’ll stick and wont come off easily.
