Funfetti: Whoopie Pies, Cake Batter and a Martini

I have to admit baking is not my forte. Quite frankly somehow I screw it up every time. There are a handful of things I can bake that come out pretty decent. :) However, I am trying to tackle this challenge one step at a time. Despite this problem baking brings out feelings of comfort and happiness in me. The sweet aromas of baked goods remind me of childhood.

Our daughter loves sweets and why not, after all, she is 5. Not a day passes when I don’t get “Mama, can I have a cookie?”

Tonight I was in the festive mood. I decided to make all things Funfetti. I made a little something for Briana and of course something a bit healthier for us adults. I even got Hubby to participate and flex his bartending muscles by making us Funfetti Martinis. By the time we were finished there were sprinkles in our hair, all over the counter and the floor. I loved watching Briana try to steal goodies when I turned my back. She laughed so hard whenever I would catch her. Moments like this create memories for a lifetime. :)

The fun began with Funfetti Whoopie Pies. I baked cookies first and then made whipped frosting with a little blue food dye for fun. I am not ready to conquer the world of making cookies from scratch just yet so I cheated and used Pillsbury Funfetti cake mix in a box. :) Let me tell you, I am glad I did because I was inspired to make Funfetti cake batter dip with strawberries. Can I just add that it is absolutely divine and the best part it’s not bad for you. I also ended up using some of this batter as whoopie pie stuffing. While I was doing all that Kurt made us fantastic Funfetti Martinis.

Funfetti Whoopie Pies

Funfetti Whoopie Pies Recipe
Dessert, Cake, Cookies, Funfetti
  
Ingredients
  • 1 box Pillsbury Funfetti Cake Mix
  • 2 eggs
  • 1/2 cup of vegetable oil
  • Frosting
  • 1 cup Pillsbury Funfetti vanilla frosting
  • 2 drops Blue food dye
Directions
  • 1. Mix all ingredients together.
  • 2. Form into one inch balls.
  • 3. Dip a bottom of a round glass into flour and press each ball onto a baking sheet.
  • 4. Bake about 10 min. Cool completely.
  • 5. Mix food dye and frosting in a bowl.
  • 6. Spread frosting generously on one side of the cookie then take a second cookie and press on top to form a sandwich.
  • 7. Repeat with the rest.
  • Enjoy.

Funfetti Cake Batter Dip

Funfetti Cake Batter Dip Recipe
Dessert, Dip, Strawberries, Funfetti, Cake batter, Snack
Cooks in   
Ingredients
  • 1/2 package of boxed Funfetti mix
  • 1 16 oz package of Chobani Non Fat Vanilla yogurt
  • 1 1/2 cup lite cool whip
  • fresh strawberries
Directions
  • 1. Mix well cake mix, yogurt and cool whip.
  • 2. Serve with strawberries for dipping.

Funfetti Martini

Funfetti Martini Recipe
Cocktail, Drink, Vodka, Tequila, Funfetti, Martini
Cooks in   
Ingredients
  • 2 oz Tequila Rose
  • 2 oz Godiva White Chocolate Liquor
  • 4 oz Pinnacle Cake Vodka
  • Funfetti sprinkles
  • Honey
Directions
  • 1. Chill martini glasses for a few minutes.
  • 2. Combine all ingredients in a shaker and shake vigorously.
  • 3. Rim the edges of a martini glass with honey and dip into funfetti sprinkles.
  • 4. Carefully pour martini into the glass and enjoy.

I wonder how many times I used the word Funfetti in this post. :)
