Two Detox Salads for New Year

I wish all of you a fantastic 2013. I am not the person to make a list of resolutions but I would like to do something different this year. 2012 was a great but hectic year, full of busy work schedules, goals and deadlines. Often I found myself exhausted while juggling career, family life and my new blog. Don’t get me wrong, I love all three and would not change a single thing. What I would like to do is learn how to be in tune with myself, listen to what my body tells me, become more patient and reduce the amount of stress I let in. Before I had my precious child I immensely enjoyed yoga and this year I am going to rediscover that connection. And I’m really looking forward to that.

Now that all the festivities are over I thought it would be a nice thing to share two delicious salads, perfect to detox your body and start the year off right. I’ve named these two so many ways, His and Her Detox Salads, God & Goddess Detox, Sweet & Savory Detox Salads, but no matter what I call them, the end result is to load your body with vitamins and give it a little break. Oh, I forgot to mention, they’re both equally yummy. :)

Loaded with healthy ingredients both of these salads are full of antioxidants, vitamins, fiber and minerals. They’re satisfying too.

For the Sweet Detox salad I used kale (massaged for a minute), baby arugula and mixed greens. Then sliced up cucumbers, persimmons, tomatoes and added whole berries and grapes.

In the Savory version, i used the same greens but instead i added broccoli, tomatoes, cucumbers, grapes and avocado. And for extra protein – cottage cheese on the side. Hubby really loves cottage cheese on his salad and eats most of them that way.

Sweet Detox Salad

Ingredients
  • 1 cup kale, removed from stems and ripped into small peaces
  • ½ cup arugula
  • ½ cup mixed greens
  • 1 small cucumber, cut in half, seeds removed, sliced
  • ¼ cup grape tomatoes, sliced in half
  • ¼ cup grapes
  • ¼ cup blackberries
  • ¼ cup blueberries
  • 2 tbsp low fat italian dressing
Instructions
  1. Massage kale gently until it begins to soften.
  2. Mix kale with arugula and mixed greens.
  3. Top with the rest of the ingredients.

Savory Detox Salad

Ingredients

  • ½ cup broccoli, cut into bite size peaces
  • ½ avocado, cut into small chunks
  • ¼ cup cherry tomatoes, sliced in half
  • 1 small cucumber, cut in half, seeds removed, sliced
  • ¼ cup grapes
  • ¼ cup 1% cottage cheese
  • 2 tbsp low fat italian dressing
Instructions
  1. Massage kale gently until it begins to soften.
  2. Mix kale with arugula and greens.
  3. Top with the remaining ingredients.
