Before I go on and talk about what I have been eating lately I want to share this awesome picture I saw on Natural Cures Not Medicine website. It has been stuck in my head all week.

My day began the same as it always does – with a smoothie. This time I used 2 small carrots, 1 medium apple, 1 banana, a bunch of kale, parsley and almond milk. DELICIOUS!!!! Did you know that parsley is nutrient powerhouse rich in flavonoids, loaded with folic acid, vitamins A and C. While parsley is a wonderfully nutritious and healing food, it is often under-appreciated. Most people do not realize that this vegetable has more uses than just being a decorative garnish that accompanies a restaurant meal.
For lunch I had dinner leftovers. Although I prefer to pack a fresh salad for lunch, sometimes I opt out for leftovers mostly because my dinner is super yummy or it’s an easy option. Both were the case here. I had organic soba buckwheat noodles with broccoli, shrimp and arugula pesto. I try to include veggies with all of my meals.
I tried something new today: I bought a Lara bar. Because I am addicted to anything coconut I had the coconut cream pie flavor. I can’t say that I loved it. It was ok. I liked it but probably wouldn’t buy it again.
Dinner was the highlight of all my eats. I made a Moroccan Chicken Salad with Farro. It was fabulous. Check back I will be posting a recipe.
