If you read my post of Monday then you know that it’s Vegetarian Week in my house. I challenged my meat loving husband to eat meat free for a week and so far it’s going well. I did some prep work as winging was not going to cut it. I planned the entire week worth of meals, bought all the ingredients ahead of time and tried getting creative. You can read all about it in my previous post, Vegetarian Challenge & Ribollita.
What is a better day to talk about food than Wednesday, after all this is the day food sharing happens all around the web. It’s the What I Ate Wednesday, Vegetarian Edition.
Today I was going to share a delicious recipe for Herb Mushroom Chickpea Ragout with Toasted Garlic Sourdough but while slicing the mushrooms I cut my finger pretty deep, removing half of the nail. It took me a long time to stop the bleeding, I lost all interest in cooking and couldn’t get over the pain.
Instead we ordered Indian food delivery but stuck to the original plan and picked vegetarian dishes. My Vegetable Thali was scrumptious.
To start the day I had a few banana oat pancakes at home and a Beet Smoothie in the car on my way to work.
For lunch I made a salad with mixed greens, tomatoes, cucumbers, roasted cauliflower and brussels sprouts.

Since it’s still Tuesday when I’m actually putting this post together I am going to get back to my glass of wine and watch American Country Awards followed by The Victoria Secret Fashion Show.
