Last week was an interesting one for me.
If you read my last post than you already know that I had a small accident on Tuesday, small enough to screw up my entire week. I was chopping mushrooms and cut my finger pretty deep. Without going into gruesome details I had it wrapped this entire time which left me pretty useless in the kitchen, making it somewhat difficult trying to stick to the Vegetarian Week plan. Fun right?
However, I am not a quitter and with a few changes, take-out food and the help of my wonderful husband I still pulled it off. The best news is that Kurt lost 9 lbs. He even agreed to do this on a regular basis and I’m very happy about that. Success!
I am still feeling the effects of last week’s incident and work has been getting the best of me lately so I am going to cut this post short, share my eats and get back to my couch. Without further ado here is What I Ate
Surprise, surprise, my breakfast was not any different today. My favorite smoothie recipe is one orange, half banana, half avocado, handful of spinach, 7 strawberries and almond milk. I make it all the time, sometimes substituting orange juice for orange. The combination of these flavors is so good.
Occasionally I take a longer lunch and drive down to Whole Foods for their salad bar. I loaded the box with all kinds of yummy things this time, but my favorite was the grilled tofu.
More veggies for dinner: roasted beet salad with blue cheese crumbles, roasted yellow squash with red onions and chickpea sauté with kale and mushrooms. Delicious? Yes! Nutritious? Yes! Satisfying? Absolutely!
Our Christmas tree is full of ornaments that have lots of importance to us. We always bring a new one back from each vacation that we take as well as have a family one made every year. I wanted to share some of my favorites with you.
