It’s been a few weeks since I last shared my WIAW eats. It was sort of intentional. I didn’t want to bore you with the same old eats, the same old “Hey there. It’s Wednesday. Here is what I ate”. I took a break. A break is a good thing. It’s refreshing. It makes old things new again.
My day started with a short 25 min run on the treadmill followed by one of my favorite morning concoctions. I am obsessed with adding avocado to my morning smoothies. Besides the amazing health benefits, I love the velvety rich texture it creates.
For breakfast I had a yogurt parfait. I layered organic Greek yogurt, organic fresh raspberries, banana and granola in a mason jar. It was a scrumptious breakfast, filling and satisfying.
My sushi addiction got the best of me around lunch time. It worked out well since I forgot my lunch at home.
One of my absolute favorite snacks is avocado sprinkled with sea salt. I probably have it about 4 times a week. It’s a great pick me upper.
The day ended on a happy note with a mimosa and a Mediterranean Style Pizza I made for dinner. I’ve made this pizza twice now. Kurt and I are absolutely loving it. I’ll be sharing the recipe soon. Be sure to check back.
Thanks Jenn at Peas and Crayons for hosting What I Ate Wednesday. I leave you with these happy thoughts.
