Wholesome snack: Grape Tomato Bruschetta

Hopefully you all got to enjoy a three day weekend as much as I did. Getting the much needed sleep and relaxation made me feel like a millions bucks. Having three days off is sort of like a mini vacation for me. Not only did I get the house chores completed and all the laundry done but I was able to enjoy some “me” time as well. Sunday turned out to be a cold and rainy day, but that didn’t bother me at all. Actually, I really enjoyed the gloominess of the day, the coziness of the house, the warmness of my long sleeve sweater and delicious hot toddies Kurt made us. I decorated the house a little bit and we spend most of the day watching football and movies. Perfect Sunday with my babes.



I set the beautiful gourds we found at our recent apple picking trip on my dining room table and the mantle.


We also got those yummy smelling pine cones that filled our house with the smell of cinnamon and pine trees.


After lunch I made a fantastic little appetizer. Healthy and nutritious, this bruschetta took me less than 5 minutes to prepare, but it was flavorful and satisfied the cravings. All you need to do is quarter grape tomatoes, chop some garlic and parsley. Season with salt and olive oil and dig in. :)



SONY DSCThis bruschetta goes so well with sourdough bread. The juice at the bottom is the best part. We both had our eyes set on it. One watched the other carefully to make sure it was evenly split. :)

Why does the weekend have to come to an end. It always flies by while the rest of the week just goes on and on. I guess if every day was the weekend then we wouldn’t cherish the happy moments we create by sharing the time with our loved ones.

Grape Tomato Bruschetta

Grape Tomato Bruschetta Recipe
Snack, Appetizer, Tomatoes
Cooks in    Serves 2
  • 1/2 pint grape tomatoes, quartered
  • 2 small or 1 large garlic cloves, minced
  • 1 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • salt to taste
  • 1. Quarter tomatoes
  • 2. Combine all ingredients together. Season with salt.
  • 3. Serve with crusty bread.
