
Hey there, can’t believe it’s Wednesday already. But I’m actually pretty pleased with that. I was off on Monday and have only two more days of work left this week. It has been a super cold week I might add. We are expecting to get some snow on Friday although I’m looking forward to finally getting a little Winter Wonderland.
All right, let’s see what I’ve been eating.
Breakfast was on the go. I grabbed a Skinny Vanilla Latte at Starbucks to go along the greek yogurt with granola and strawberries. This wasn’t the best breakfast but I must admit I certainly enjoyed it.

For lunch I had leftovers of the Chorizo Anasazi Beans from dinner the night before. This was my first time making these beans but it will certainly NOT be my last. Anasazi beans are small kidney shaped purple and white beans that turn pink when cooked. They are lightly sweet and meaty but filling and satisfying. I packed about 1 cup of beans with a little rice, but only ate the beans. Stay tuned recipe coming soon.

I also had a cup of fruit and berries.

My mid afternoon snack was awesome. I sliced up half of a granny smith apple, topped it with almond butter, strawberries and coconut shavings. I also had a few dates stuffed with almond butter as well. Yumm.

As for the last meal of the day, I made Turkey, Feta & Spinach Stuffed Peppers and enjoyed a glass of Cupcake Pinot Grigio. These peppers were amazing, flavorful and delicious. I’ll also be putting up this recipe soon.

I know this looks like a lot of food but the awesome part is all of this was only 1249 calories.
