Hey there. Sorry I’ve been MIA, but I sort of needed a little time out. Things have been a little too fast paced lately and by the time saturday rolled around I found myself exhausted. I came home from work and I did something different, I did something I never do, I took a nap. Haha. I know what you’re thinking….. :) But Briana was sleeping over her grandma’s house and hubby was still at work. Somehow my motivation to work out left me and I found myself cuddled in bed. It was awesome, I slept for 3 hours.

I have been eating super healthy and I am happy to announce I lost 5 lbs over the last two weeks. All in time for our trip to Dominican Republic. So let’s see what I ate.

Over the last week Kurt and I had smoothies everyday for breakfast. For this one I used fresh pineapple chunks, a banana, a mango, one kiwi and some mint leaves. To make my life simple I put all the fruit into the blender the night before, then added vanilla coconut milk in the morning and blended into a yummy concoction. I’m sorry but I was in such a rush I had no time to take a picture of the actual smoothie. But I promise it was absolutely delicious. Briana loved it too.

For lunch I had a great salad combo. I used leftovers of Tabbouleh salad and fresh mixed greens topped with mushroom slices, carrots, peas, broccoli, asparagus, imitation crab meat and low fat ranch dressing.

The weather has been really crappy and although I drink a lot of water, lately I’ve been drinking a ton of tea just to keep myself warm. I sip green tea all through out the day.

For dinner I made Beer, Shitake and Barley Stew full of winter vegetables and shitake mushrooms. This is the best beef and barley soup I have ever had. Can not wait to have some for lunch again tomorrow. Be sure to check back, I’ll be posting a recipe.

Right before bed I had another cup of tea. This time I made it with Matcha Green Tea powder, honey, lemon and mint leaves.

I think I actually fell asleep on the couch right after I had this.

    Oh my gosh, the stew looks divine! I will definitely check back for the recipe and place it on my meal list for next weeks grocery shopping!

    Great idea getting the smoothie ingredients together the night before. I might try that right now for tomorrow morning. Seems like such a time saver, and I definitely need to get better at organizing my time. :) Thanks for sharing.

    Yay! Congrats on losing (OMG so much) weight! And revealing your secrets – lots of healthy, tasty foods. The stew is extremely tempting ;)
