This weather has been driving my hair nuts lately. I am suffering from major static. Over the last few days it’s been sticking to my face, my clothes and my neck. On Monday, while out shopping, I couldn’t try clothes on because my hair was so unruly. I looked like one of those cartoon characters that had just been zapped with a lightning bolt. Kurt is afraid to kiss me for fear of shocking the lips of his face. I can probably power on an entire power plant with my static electricity. I am officially proclaiming myself The Queen of Static Electricity.

So here is what this Queen of Static electricity has been eating.
My morning began with a breakfast smoothie made with strawberries, kiwi, pineapple, mint, banana, spinach and coconut milk. Smoothies for breakfast are working magic for me. Not only do I get my fruits and vegetables in first thing in the morning but I can pretty much go till lunch without eating.

For lunch, I enjoyed a bowl of Barley, Chickpea and Kale soup. I made a big pot of it to last through the week. Let me tell you not only is this baby loaded with veggies but it is extremely satisfying. It seriously filled me up.

My mid afternoon snack consisted of a Clementine and White Bean and Basil Hummus from Trader Joe’s along with a few flax seed chips also from Trader Joe’s. Speaking of Trader Joe’s, I made a huge mistake on going to one on President’s Day. Not my usual store, but one in a trendy town with little parking and seriously strange people. I felt as if I was at the zoo and had to fight for my food. People were being obnoxious, pushy and rude. I don’t think I’ll frequent this store again.


Dinner was succulent. It was perfect. Just what a simple dinner should be. I broiled clams until barely opened to keep all the juices. I plated the clams into bowls and topped with a warm cannellini mixture with finely shredded kale and drizzled with fresh herb vinaigrette. I served a piece of crusty char broiled bread for mopping the juices. As a side dish I served individual salads with avocado slices, gorgonzola crumbles and homemade dressing. It was like having a gourmet dinner at a nice restaurant. Soooooooooo freakin good. Stay tune for the recipe.
